kinnathappam / steamed rice cake

kinnathappam is a traditional Malabar recipe. Now a days its found in every where.It is a tea time recipe..Instead of raw rice you can use rice powder or basmati rice also.Jaggery can be replaced with sugar., then it will be pure white in colour. But it is the traditional and healthy way.


Ingredients:
  1. Raw rice-1cup
  2. Coconut milk-1cup(without adding water)
  3. Jaggery-4cubes
  4. Cooked rice-1tbsp
  5. Cardamom-2nos
  6. Salt-a pinch
  7. Ghee-1tsp
  8. Roasted cashew-few
Preparation:
  • Soak the rice in water for 3 hours.
  • Grind it with coconut milk, cardamom,  cooked rice and salt to a fine paste.
  • Add melted jaggery syrup in to it ( make dosa batter consistency).
  • Pour it in to a ghee greased cooking plate,  spread the cashew nuts also.
  • Steam cook it for about 15 to 20 minutes until done (Insert a tooth pick and check it comes out clean).
