Chukkappam

Chukkappam is a nostalgic Kerala snack. The fried rice flour bites are look like buttons. It is sometimes served along with fried bites of chicken or beef.
Ingredients:
  1. Rice flour -1 cup (lightly roasted)
  2. Coconut milk- 1 1/4 cup
  3. Egg-1 small
  4. Black sesame seeds- 1/4 tsp
  5. Salt-to taste
  6. Oil-for  frying
Preparation:
  • Boil coconut milk in a heavy bottom pan with salt.
  • When it boils, add rice flour and mix well in low flame for a minute and switch off the flame.
  • Allow to cool little, make a dough out of it.
  • Beat one egg, mix it with sesame seeds.
  • Add the egg little by little in to the dough and knead it well to a smooth dough.
  • Cover and rest the dough for about 15 minutes.
  • After that make tiny dumplings out of it and flatten it using the two fingers and shape it like buttons.
  • Heat  oil in a pan, fry these chukkappam until golden and drain in to paper towels.
  • After cools down completely; store it in an airtight container for long use.
