Stuffed Bell Pepper

Egg stuffed Bell peppers makes a satisfying breakfast that contains all in one!!! It's  a great way to include bell peppers in your diet. Make your own favorite stuffing inside, top it with an egg and serve it along with your favorite dip..
Ingredients:
  1. Bell peppers (capsicum)- one large
  2. Cooked minced chicken- 1/4 cup
  3. Chopped vegetables- 1/4 cup (carrot, onion. cabbage and sweet corn)
  4. Parmesan cheese grated- 1/4 cup
  5. Pepper powder- 1/2 tsp
  6. Salt-little
  7. Lemon juice- 1/4 tsp
  8. Hot chilly sauce- 1/2 tsp
  9. Egg-2 nos 
  10. Red chilly flakes, pepper powder and salt-to sprinkle
  11. Butter-to brush
Preparation:
  • Wash and clean the bell pepper, pat it dry with a kitchen towel.
  • Slowly cut it in its center by making two equal halves.
  • Now do the filling
  • Mix minced chicken with vegetables, cheese, salt, lemon juice, chilly sauce and pepper powder.
  • Fill it inside the bell pepper until it's 3/4 th level.
  • Now Place it on the baking tray and carefully break an egg on top of each bell pepper.
  • Sprinkle chilly flakes, pepper powder,salt and butter on top.
  • Bake it for about 20-25 minutes or until the eggs get cooked on top.
  • Serve it hot along with rich  tomato sauce!!!
Ingredients For The Tomato Sauce:
  1. Olive oil-1 tbsp
  2. Sugar- 1/4 tsp
  3. Chopped garlic-1 tbsp
  4. Thinly chopped onion-1 small
  5. Tomato-2 large
  6. Chilly sauce-1 tsp
  7. Salt-to taste
  8. Vinegar- 1/4 tsp
Preparation:
  • Heat oil in a pan add sugar, saute garlic until nice golden.
  • Add chopped onion and saute until transparent.
  • Add thinly chopped tomato, chilly sauce, salt and vinegar.
  • Saute for 5 minutes and add 1/4 cup of hot water in to it.
  • Cover cooks for bout 15 minutes until the tomatoes are cooked and mashed well. Also the gravy thickens.
