Pineapple Pastry Cake

Pineapple pastry cake is a lovely cake preparation for all festive occasions. The cake is sweetened and flavored with pineapple goes really nice aroma and taste.
Ingredients For The Cake:
  1. Flour/ maida- 50 gms
  2. Corn Flour- 50 gms
  3. Eggs-3 nos
  4. Sugar powdered-100 gm s
  5. Baking powder- 1 tsp
  6. Pineapple essence- 1/4 tsp
Preparation:
  1. Pre-heat the oven in to 200 degrees.
  2. Sieve flour, corn flour and baking powder together.
  3. Beat 3 eggs with sugar in a large bowl until fluffy and creamy.
  4. Using a spatula, fold it with the flour mixture.
  5. Add pineapple essence and fold gently again.
  6. Pour it in to the greased baking pan and bake it for 25 minutes or until a skewer is inserted at its centre and check whether  it comes out clean.
  7. Allow to cool completely before frosting.
Ingredients For Frosting:
  1. Whip cream- 1 1/2 cup
  2. Sugar powder- 1/2 cup
  3. Canned Pineapple Slices
  4. Pineapple syrup-1 cup
  5. Sugar- 1/4 cup
Assembling the cake:
  • Drain the pineapple slices from the can and reserve the drained syrup.
  • Mix the syrup with 1/4 cup of sugar until diluted.
  • Whip the  cream with powdered sugar  till soft peaks.
  • Cut the cake in to two equal rounds.
  • On top of both cake halves spread the pineapple syrup evenly with a fork or spatula.
  • Allow to absorb it fully (rest about 15 minutes).
  • Top the bottom layer with 1/4 part of whip cream and pineapple hunk (cut two slices of pineapple in to small chunks).
  • Top it with another slice of cake and whip the cream all over t evenly.
  • Garnish on top with pineapple slices and on sides with pineapple  chunks.
  • Refrigerate for 2 hours to set.
  • Cut in to slices and enjoy!!!!
