Pineapple pastry cake is a lovely cake preparation for all festive occasions. The cake is sweetened and flavored with pineapple goes really nice aroma and taste.

- Flour/ maida- 50 gms
- Corn Flour- 50 gms
- Eggs-3 nos
- Sugar powdered-100 gm s
- Baking powder- 1 tsp
- Pineapple essence- 1/4 tsp
- Pre-heat the oven in to 200 degrees.
- Sieve flour, corn flour and baking powder together.
- Beat 3 eggs with sugar in a large bowl until fluffy and creamy.
- Using a spatula, fold it with the flour mixture.
- Add pineapple essence and fold gently again.
- Pour it in to the greased baking pan and bake it for 25 minutes or until a skewer is inserted at its centre and check whether it comes out clean.
- Allow to cool completely before frosting.
- Whip cream- 1 1/2 cup
- Sugar powder- 1/2 cup
- Canned Pineapple Slices
- Pineapple syrup-1 cup
- Sugar- 1/4 cup
- Drain the pineapple slices from the can and reserve the drained syrup.
- Mix the syrup with 1/4 cup of sugar until diluted.
- Whip the cream with powdered sugar till soft peaks.
- Cut the cake in to two equal rounds.
- On top of both cake halves spread the pineapple syrup evenly with a fork or spatula.
- Allow to absorb it fully (rest about 15 minutes).
- Top the bottom layer with 1/4 part of whip cream and pineapple hunk (cut two slices of pineapple in to small chunks).
- Top it with another slice of cake and whip the cream all over t evenly.
- Garnish on top with pineapple slices and on sides with pineapple chunks.
- Refrigerate for 2 hours to set.
- Cut in to slices and enjoy!!!!
