Achappam

Achappam is a popular Kerala crispy snack recipe It is often made on festive occasions like marriage, Eid, etc.
Ingredients:
  1. Rice flour- 3/4 cup
  2. Plain Flour / Maida- 1/4 cup
  3. Egg-1
  4. Coconut milk-1cup
  5. Sugar- 14 cup
  6. Sat-a pinch
  7. Black sesame seeds / karinjeerakam- 1/2 tsp
  8. Oil-for deep frying
Preparation;
  • In a deep bowl add egg, coconut milk and salt.
  • Mix well and then add sugar, flours and black sesame seeds. Mix well the batter without any lumps.
  • Heat oil in a pan, when it is hot, took the achappam mold and dip it in the batter so that the batter is coated on the mold; then immediately dip the mold in hot oil.
  • Slowly detach the achappam from mold using a puller and fry it in the hot oil until both sides are nice golden in color.
  • Again dip the achappam mold in batter and repeat it until the batter gets finished.
