Rice Pancake / Malabar Mutta Pathiri

Here is the simple yet delicious recipe of Malabar special muttapathiri (rice pan cake). Normally it is served as a breakfast on special occasions along with some non-veg side dishes (especially beef fry). Or it can be eaten as a snack along with a cup of tea.
Ingredients:
  1. Raw Rice- 2 cup
  2. Egg-1
  3. Baking soda- 1/4 tsp
  4. Salt-to taste
  5. Oil-for deep frying
Preparation:
  • Wash and soak raw rice in water for 3-4 hours.
  • Drain it; blend along with an egg and little water in to a smooth dosa batter consistency.
  • Mix it with baking soda and enough salt.
  • Now heat a pan with oil.
  • When the oil is hot; pour a small laddle of batter in to it. (do deep fry; then only it will puffed up).
  • Fry in medum flame until both sides get cooked (the sides get nice golden in color).
  • Drain in to paper towel to absorb excess oil.
  • Serve warm with the choice of your favorite side dish, or eat itself along with a cup of tea.
  • Note: You can use 3/4 tsp of baking powder instead of baking soda used here.
