Unniyappam

Unniyappam is popular Kerala snack.It is the sweet dumpling made with ice flour, ripe banana ad jaggery in a special pan having lots of pits.
Ingredients:
  1. Rice flour- 2 cup
  2. Ripe small banana (palayankodan)-2 nos
  3. jaggery grated-2 cup
  4. Coconut milk- 1/2 cup
  5. Water- 1/4 cup
  6. Cardamom powder- 1/4 tsp
  7. Salt-a pinch
  8. black sesame seeds- 1/4 tsp
  9. Coconut bites- 3 tbsp
  10. Ghee-2 tbsp
  11. Oil-for frying
Preparation:
  • Melt the jaggery with 1/4 cup of water.
  • After cools down ; strain it in to the rice flour.
  • Add salt and  coconut milk in to it.
  • Mash two bananas well and add it in to the above pan.
  • Heat ghee in a pan, fry coconut bites until nice golden, add sesame seeds in to it and switch off the flame.
  • Add these fried coconut bites and sesame seeds in to rice flour mix.
  • Add more water if needed to make a thick batter.
  • Heat unniyappan pan with oil (each pits has its half the level oil).
  • Add a ladle of batter in each pits.
  • When the one side gets  almost browned and cooked (in medium flame) turn in to the other side and fry until nice brown in color.
  • Drain in to paper towels and allow to cool.
  • Keep fridge for long use; up to one weak.
