Kerala roast recipes are always spicy, delicious and easy to cook. Here is a simple mutton roast recipe with authentic Kerala spices.

- Mutton- 1 kg
- Coconut oil- 2 tbsp
- Fenugreek (uluva)- 1/4 tsp
- Whole garam masala pieces-few
- Onion-1 small
- Shallots chopped-1 cup
- Ginger garlic crushed-2 tbsp
- Green chilly-3 nos
- Tomato-2 nos
- Turmeric powder- 1/2 tsp
- Chilly powder-1 tbsp
- Coriander powder- 1 1/2 tbsp
- Pepper powder-1 tsp
- Salt-to taste
- Curd-1 tbsp
- Ghee-1 tbsp
- Coconut bites-2 tbsp
- Curry leaves-2 springs
- Dry red chilly-2 nos
- Garam masala powder-1 tsp
- Cook cleaned mutton pieces by adding half the quantity of all powders listed above. (do pressure cook or in a pot until done).
- Heat oil in a kadai, add fenugreek and whole garam masala pieces.
- Add chopped onion and shallots in to it; saute until nice golden in color.
- Add ginger garlic and green chilly; saute until raw smell goes off.
- Add tomato chopped and saute until mashed well.
- Add all the remaining powders and saute for a minute.
- Add cooked mutton pieces and curd; mix well and cook until all the water content dries out.
- Switch off the flame and do tempering.
- For tempering heat ghee in a pan, fry coconut bites until nice golden.
- Add split red chilly and curry leaves.
- Add garam masla powder and switch off the flame.
- Add it in the mutton masala and mix well before serving.
