Kerala Style Mutton Roast

Kerala roast recipes are always spicy, delicious and easy to cook. Here is a simple mutton roast recipe with authentic Kerala spices.
Ingredients:
  1. Mutton- 1 kg
  2. Coconut oil- 2 tbsp
  3. Fenugreek (uluva)- 1/4 tsp
  4. Whole garam masala pieces-few
  5. Onion-1 small
  6. Shallots chopped-1 cup
  7. Ginger garlic crushed-2 tbsp
  8. Green chilly-3 nos
  9. Tomato-2 nos
  10. Turmeric powder- 1/2 tsp
  11. Chilly powder-1 tbsp
  12. Coriander powder- 1  1/2 tbsp
  13. Pepper powder-1 tsp
  14. Salt-to taste
  15. Curd-1 tbsp
For Tempering:
  1. Ghee-1 tbsp
  2. Coconut bites-2 tbsp
  3. Curry leaves-2 springs
  4. Dry red chilly-2 nos
  5. Garam masala powder-1 tsp
Preparation:
  • Cook cleaned mutton pieces by adding half the quantity of all powders listed above. (do pressure cook or in a pot until done).
  • Heat oil in a kadai, add fenugreek and whole garam masala pieces.
  • Add chopped onion and shallots in to it; saute until nice golden in color.
  • Add  ginger garlic and green chilly; saute until raw smell goes off.
  • Add tomato chopped and saute until mashed well.
  • Add all the remaining powders and saute for a minute.
  • Add cooked mutton pieces and curd; mix well and cook until all the water content dries out.
  • Switch off the flame and do tempering.
  • For tempering heat ghee in a pan, fry coconut bites until nice golden.
  • Add split red chilly and curry leaves.
  • Add garam masla powder and switch off the flame.
  • Add it in the mutton masala and mix well before serving.
