Andhra chicken fry is a simple, spicy and delicious chicken fry recipe which is a popular menu in most of the Andhra Restaurants. It is also known as Kodi Vepudu.
Ingredients:- Chicken-500gm
- Turmeric powder- 1/ 2 tsp
- Chilly powder- 2 tsp
- Garam masala powder- 1/2 tsp
- Ginger garlic paste- 1 1/2 tbsp
- Pearl onion/ shallots paste- 1 tbsp
- Pepper powder- 1/2 tsp
- Lemon juice-1 tsp
- Salt-to taste
- Rice powder-1 tbsp
- Flour/ maida-1 tbsp
- Oil-for frying
- Curry leaves-4 springs
- Coriander leaves-1 handful
- Marinate chicken pieces with ingredients under marination and let it rest for 1 hour in fridge.
- Heat a pan with oil, add the chicken pieces and shallow fry on medium flame until nicely browned and cooked (don't do over fry).
- When the chicken pieces are almost done, add curry leaves and coriander leaves in to it.
- Serve hot with the choice of your roti or rice.
- Note: Instead of shallow frying, you can add only 4 tbsps of oil in to the pan, and cooks the chicken pieces (by covered) until done.
