Andhra Chicken Fry

Andhra chicken fry is a simple, spicy and delicious chicken fry recipe which is a popular menu in most of the Andhra Restaurants. It is also known as Kodi Vepudu.
Ingredients:
  1. Chicken-500gm
  2. Turmeric powder- 1/ 2 tsp
  3. Chilly powder- 2 tsp
  4. Garam masala powder- 1/2 tsp
  5. Ginger garlic paste- 1 1/2 tbsp
  6. Pearl onion/ shallots paste- 1 tbsp
  7. Pepper powder- 1/2 tsp
  8. Lemon juice-1 tsp
  9. Salt-to taste
  10. Rice powder-1 tbsp
  11. Flour/ maida-1 tbsp
Other Ingredients:
  1. Oil-for frying
  2. Curry leaves-4 springs
  3. Coriander leaves-1 handful
Preparation:
  • Marinate chicken pieces with ingredients under marination and let it rest for 1 hour in fridge.
  • Heat a pan with oil, add the chicken pieces and shallow fry on medium flame until nicely browned and cooked (don't do over fry).
  • When the chicken pieces are almost done, add curry leaves and coriander leaves in to it.
  • Serve hot with the choice of your roti or rice.
  • Note: Instead of shallow frying, you can  add only 4 tbsps of oil in to the pan, and cooks the chicken pieces (by covered) until done.
