Sukhiyan

 Sukhiyan is a traditional Kerala tea time snack prepared using healthy green grams along with a sweet filling of jaggery and coconut.
Ingredients:
  1. Green gram / Cheru payar-1 cup
  2. Jaggery grated- 3/4 cup
  3. Coconut grated- 3/4 cup
  4. Cardamom powder-1 /4 tsp
  5. Salt-a pinch
  6. Flour / maida- 1 1/2 cup
  7. Oil-for deep frying
Preparation:
  • Soak green gram in water for 3 hours.
  • Pressure cooks it with 2 cups of water and a pinch of salt until done or for 2 whistles (allow to absorb all the water content in it and cooked nicely, but not mashed).
  • Heat a pan with grated jaggery and little water (3tbsp), when it melts completely add grated coconut and mix well for a minute.
  • Add cooked green grams in to it. (if there any excess water content heat on high flame to dry).
  • Add cardamom powder, mix well  and switch off the flame.
  • Allow to cools the mixture.
  • After that make lemon sized balls out of it.
  • In a bowl add  flour and little salt; add little water and make a thick paste out of it.
  • Heat a kadai with oil.
  • Now dip a green gram balls carefully (without breaking) in flour batter (cover it fully by dripping batter over it with a spoon) and quickly add it in to the hot oil.
  • Deep fry it in the hot oil until nicely done.
  • Drain in to paper towels and serve hot with  a cup of tea.
