Sukhiyan is a traditional Kerala tea time snack prepared using healthy green grams along with a sweet filling of jaggery and coconut.

- Green gram / Cheru payar-1 cup
- Jaggery grated- 3/4 cup
- Coconut grated- 3/4 cup
- Cardamom powder-1 /4 tsp
- Salt-a pinch
- Flour / maida- 1 1/2 cup
- Oil-for deep frying
- Soak green gram in water for 3 hours.
- Pressure cooks it with 2 cups of water and a pinch of salt until done or for 2 whistles (allow to absorb all the water content in it and cooked nicely, but not mashed).
- Heat a pan with grated jaggery and little water (3tbsp), when it melts completely add grated coconut and mix well for a minute.
- Add cooked green grams in to it. (if there any excess water content heat on high flame to dry).
- Add cardamom powder, mix well and switch off the flame.
- Allow to cools the mixture.
- After that make lemon sized balls out of it.
- In a bowl add flour and little salt; add little water and make a thick paste out of it.
- Heat a kadai with oil.
- Now dip a green gram balls carefully (without breaking) in flour batter (cover it fully by dripping batter over it with a spoon) and quickly add it in to the hot oil.
- Deep fry it in the hot oil until nicely done.
- Drain in to paper towels and serve hot with a cup of tea.
