Harees / Aleesa

Harees  is a simple dish cooked with wheat and meat. It often cooked at Ramadan time. It’s a good food for both children’s and adults. Only few ingredients are needed to cook harees.

Ingredients:
  1. Whole wheat-1cup
  2. Chicken-250g (or mutton)
  3. Cardamom-2nos
  4. Cinnamon-1small stick
  5. Clove-2nos
  6. Pepper powder- ½ tsp
  7. Salt- to taste
  8. Olive oil / butter-2tbsp
Preparation:
  • Soak the wheat in water for overnight.
  • In a large pan add drained wheat, chicken pieces, whole spices and pepper powder along with 3 cups of water.
  • When it starts boiling, cover the lid and cook in simmer mode for almost 1 hour (stir occasionally.
  • Add boiled water if necessary.
  • Take out the chicken pieces and whole spices (cardamom, cinnamon and clove).
  • Remove the bones of chicken and put it back to the pan.
  • When it reaches a porridge level add salt and switch off the flame (i.e. wheat and chicken pieces are cooked in to mushy consistency).
  • When it cools down completely blend well with an electric mixer or in a blender.
  • Heat olive oil or butter with a pinch of cardamom powder.
  • Pour it in to the harees and serve hot.
  • (if u need sweetness; add sugar, roasted cashew and raisins at the time of serving).
