Mutton Chukka / Spicy Lamb Dry Fry

Mutton chukka is a spicy and mouthwatering South Indian mutton recipe that goes perfect with steamed rice itself. Of course it is one of the favorite dish for most of all non-veg spicy lovers. Here the mutton is coated with all the Indian spices and the meat is so tender and juicy.
Ingredients:
  1. Mutton- ½ kg
  2. Turmeric powder- ¼ tsp
  3. Vinegar-1 tbsp
  4. Ginger garlic paste- 1 tsp
  5. Chilly powder- 1tsp
  6. Coriander powder-1 tbsp
  7. Salt-to taste.
  8. Oil-1 tbsp
  9. Cardamom-2 nos
  10. Clove- 2 nos
  11. Bay leaf-1
  12. Cinnamon-1 small piece of stick
  13. Onion thinly chopped- 1 large  (or shallots )
  14. Ginger garlic crushed-1 tbsp
  15. Green chilly- 2 nos
  16. Pepper powder-1 tsp
  17. Fennel powder- 1/2 tsp
  18. Garam masala powder- ¾ tsp
  19. Curd-1 tbsp
  20. Salt-little
  21. Curry leaves- 2 spring
Preparation:
  • Marinate mutton pieces with 2-7 ingredients for an hour in fridge.
  • Pressure cooks it with little water until cooked its ¾ th.  (No need to add water; but if you wish to add; add only little amount).
  • Heat oil in another pan; add whole garam masala pieces. (cardamom, clove, cinnamon, cumin seeds, bay leaf)
  • Add onion chopped and sauté for a minute.
  • Add ginger garlic crushed and green chilly; Saute until raw sell goes off.
  • Add curd and mix well.
  • Add garam masala powder, pepper powder, fennel powder and salt.; mix well.
  • Add curry leaves and cooked mutton pieces along with its water (if any)
  • Cooks on high flame until all the water gets absorbed and slow cook for another 10-15 minutes till the mutton pieces get dried well and gets a dark golden in color.
  • Switch off the flame and serve hot with rice or any choice of your roti…JJ
