Punjabi Kadhi pakora is a traditional Punjabi curry in which the fried pakora's are dipped in delicious seasoned curd mixture.
Ingredients:For making pakora:
- Onion-1 thiny chopped
 - Besan flour- 3 tbsp
 - Baking soda- a pinch
 - Green chilly-2 thinly chopped
 - Salt-to taste
 - Turmeric powder-a pinch
 - Chilly powder- ½ tsp
 
- Mix everything in a bowl; add little water (almost 3 tbsp) and mix well to a thick batter (like idli batter).
 - Let it rest for 15 minutes.
 - After that; take a spoon of batter and deep fried it in hot oil; in a low flame until golden in color.
 - Drain in to paper towels and keep aside.
 
- Curd / yogurt – ½ cup
 - Besan flour- 1 ½ tbsp
 - Water- ½ cup
 - Salt-to taste
 - Turmeric powder- a pinch
 
- Mix everything in a bowl well; without any lumps in it.
 - Heat it for about 10 minutes in low flame; by stirring until starts thickens and the raw taste of besan gets rid off .(add more water if desired).
 - Add fried pakora’s in to it and switch off the flame; then do the seasoning.
 
- Oil- 1 ½ tbsp
 - Mustard seeds- ½ tsp
 - Fenugreek seeds- ¼ tsp
 - Cumin seeds- ¼ tsp
 - Asafetida / hing – a pinch
 - Dry red chilly- 1 large
 - Curry leaves- 1 spring
 - Ginger thinly sliced- 1 tsp
 - Chilly powder- ½ tsp
 - Coriander leaves chopped-1 tbsp
 
- Heat oil; splutter fenugreek and cumin seeds; add mustard seeds.
 - Add dry red chilly; curry leaves and ginger chopped.
 - Saute for a minute and add chilly powder, asafoetida.
 - Quickly turn off the flame and add chopped coriander leaves.
 - Add it on top of the curry and mix well before serving.
