Carrot and dates cake is a delicious moist cake. It is similar to that of plum cake version. It is a rich cake with carrots, dates and nuts. It is moist, flavorful and simple recipe.

- Maida / all purpose flour – 1 ¼ cup
- Baking soda- ¾ tsp
- Cinnamon powder- 1/4 tsp
- Oil- ¾ cup
- Sugar- ½ cup
- Egg-3
- Vanilla essence- ¼tsp
- Grated carrots-1cup
- Grated dry dates-1cup
- Chopped nuts-1/2 cup
- Sugar- ½ cup
- Hot water- ¼ cup
- Sift flour, cinnamon powder and baking soda together.
- Mix the carrots, dates and nuts with a table spoon of Maida and sieve the excess Maida.
- Heat sugar for caramel in a pan; don’t stir it but swirl the pan to reach the caramelized sugar in equal portions.
- When the sugar gets really dark color (little bitter consistency- which makes the cake tastes well) add hot water in to it (be careful when adding hot water).
- Switch off the heat suddenly as soon as caramel is dissolved in water.
- Keep it aside to cool.
- Mix egg and sugar in bowl; with a beater.
- Add oil in to it; mix well.
- Add caramel syrup and vanilla essence.
- Add flour in to it and mix slowly.
- Add carrots, dates and nuts; mix well.
- Pour it in to a greased pan (with maida and butter) and bake it in a preheated oven for 40 minutes at 180 degree. (Or bake it in the pressure cooker mode http://12recipe.blogspot.com/2015/02/simple-sponge-cake-pressure-cooker-cake.html ).
