Vegetable pulao is a satisfying comfort food for all. It is very simple, quick and healthy choice. To accomplish for the non-vegetarians, serve it with any of your favorite side dish. Instead of water we can make it with coconut milk also, and then it becomes more rich in flavor.
Ingredients:
Vegetable Pulao |
- Basmati rice-1 ½ cup
- Water-3cup
- Vegetables chopped- 1 ½ cup (carrot, beans, green peas, potato, corn, capsicum)
- Onion-1 medium
- Tomato-1 medium
- Ginger paste-1tsp
- Garlic paste-1tsp
- Green chilly paste-1tsp
- Oil / ghee-2tbsp
- Whole garam masala pieces-cardamom, bay leaf, cinnamon, pepper, fennel seeds and cloves
- Salt-to taste
- lemon juice-1tsp
- Coriander leaves-few
- Wash and soak the rice in water for 30 minutes.
- Heat oil/ghee in a pan; splutter whole garam masala pieces.
- Add onion; sauté till transparent.
- Add ginger, garlic and green chilly; sauté till raw smell goes off.
- Add tomato; sauté till mushy;
- Add chopped vegetables in to it and sauté for 3 minutes.
- Add drained rice in to it; sauté for 5 minutes.
- Add boiled water, lemon juice and salt in to it.
- Cover the lid and cook in low-medium flame.
- Turn off the heat when all the water gets absorbed.
- Garnish with coriander leaves.
- Serve hot it with raita and pickle.
