Neyyappam is a Kerala special puffy sweet snack made with rice flour and jaggery. It’s a version of fried pan cake. You can skip the egg used here, and then we can store it in an air tight container for long time.

- Rice Powder-2cup
- Small banana-2
- Egg-2nos
- Jaggery / sugar-to taste
- Coconut milk-2cup (almost)
- Cardamom powder- ¼ tsp
- Salt-a pinch
- Oil-for frying
- Melt jaggery with water and strain it.
- Peel off the banana and blend in to a fine paste.
- Mix it with rice powder, egg , cardamom powder and salt.
- Add jaggery syrup in to it little by little.
- Add coconut milk slowly and keep mixing until it reaches the consistency that slightly thicker than dosa batter.
- Heat oil in deep bottom pan; pour one ladle of batter in to it.
- Deep fry until both sides are golden brown in color.
- Drain in to tissue paper to avoid excess oil and enjoy with a cup of tea.
