Neyyappam / Fried Pan Cake

Neyyappam is a Kerala special puffy sweet snack made with rice flour and jaggery.  It’s a version of fried pan cake. You can skip the egg used here, and then we can store it in an air tight container for long time.


 Ingredients:
  1. Rice Powder-2cup
  2. Small banana-2
  3. Egg-2nos
  4. Jaggery / sugar-to taste
  5. Coconut milk-2cup (almost)
  6. Cardamom powder- ¼ tsp
  7. Salt-a pinch
  8. Oil-for frying
Preparation:
  • Melt jaggery with water and strain it.
  • Peel off the banana and blend in to a fine paste.
  • Mix it with rice powder, egg , cardamom powder and salt.
  • Add jaggery syrup in to it little by little.
  • Add coconut milk slowly and keep mixing until it reaches the consistency that slightly thicker than dosa batter.
  • Heat oil in deep bottom pan; pour one ladle of batter in to it.
  • Deep fry until both sides are golden brown in color.
  • Drain in to tissue paper to avoid excess oil and enjoy with a cup of tea.
