Vegetable Kurma


Vegetable kurma is a great side dish for any meal. It is very simple and easy to make. The vegetable in the rich coconut milk gravy makes it really yummy. No more seasoning flavors are required to make this.


 Ingredients:
  1. Chopped vegetables -1cup (beans, carrot, cauliflower, fresh green peas, potato)
  2. Onion-1
  3. Ginger garlic paste-1tbsp
  4. Capsicum-small one
  5. Cumin seeds-1tsp
  6. Oil-1tbsp
  7. Green chilly-1
  8. Pepper powder-1tsp
  9. Garm masala- ¼ tsp
  10. Salt-to taste
  11. Thick coconut milk-1cup
  12. Coriander leaves-few
Preparation:
  • Heat oil in a pan, splutter cumin seeds.
  • Add chopped onion in to it and sauté for a minute. No need to sauté well.
  • Add ginger garlic paste and green chilly, sauté till the raw smell goes off.
  • Add chopped vegetables, pepper powder and salt along with 1cup of water.
  • Cover the lid and cook about 20 minutes.
  • Add thick coconut milk, capsicum and garam masala.
  • Open cook it until it starts to thicken the curry.
  • Sprinkle coriander leaves on top of it.
