Apple Kums Recipe


 Apple kums is a popular Malabar Ifthar snack. It have a cake texture but tastes like pudding. We can make carrot kums, egg kums and dal kums by replacing the apple with carrot, egg and dal. You can skip the caramel syrup used here, because caramel syrup is added to avoid the raw taste of apple.

Ingredients:
  1. Apple-2
  2. Egg-3
  3. Caramel syrup-2tbsp
  4. Milk powder-4tbsp
  5. All purpose flour / maida-2tbsp
  6. Sugar-3tbsp
  7. Baking powder- ½ tsp
  8. Vanilla essence-few drops
  9. Ghee-2tsp
  10. Cashew, raisins –to decorate
Preparation:
  • Peel and chop the apple in to small pieces.
  • In blender, add apple pieces, eggs, caramel and sugar.
  • Blend it in to a fine paste.mix it with milk powder, flour and baking powder with a hand mixer.
  • Heat ghee in a non-stick pan or pressure cooker (if the pressure cooker is used, remove the weight).
  • Pour the batter in to pan.
  • Cook covered on low flame for 25-30 minutes or until it’s done (insert a tooth-pick and check it comes out clean).
  • After 10 minutes open the lid and decorate with caramelized nuts, raisins and apple pieces on top.
  • Cut in to pieces after completely cools down.

Caramel syrup:
Heat a pan on high flame, add a tablespoon of sugar. It stars to become brown in color, simmer the flame and add 2 table spoon of hot water (be careful when adding the hot water).
