Masala Ney Pathiri


Ney Pathiri or Ney Pathal is a deep fried rice rotti that belongs to Malabar cuisine. Here the masala ney pathiri have slight variant from normal ney pathal. We used to add some masala along with the basic ney pathiri ingredients. Here is the recipe of normal ney pathal, Do check Ney Pathiri . Masal Ney Pathiri brings the special taste.


 
Ingredients:
  1. Long grain rice / pachari- 1cup
  2. Rice powder-4tbsp
  3. Ginger garlic paste-2tsp
  4. Finely chopped green chilly-2
  5. Coriander leaves chopped-2tbsp
  6. Curry leaves chopped-2tbsp
  7. Salt-to taste
  8. Oil-to fry
To grind:
  1. Coconut- ½ cup
  2. Fennel seeds-1tsp
  3. Shallots-3nos
Preparation:
  • Wash and Soak the rice in water for 3 to 4 hours.
  • Grind it using a grinder or food processor without adding water or add minimal water to grind. (If you add more water, the ney pathal absorbs more oil at the time of frying. In order to avoid the absorbance of water Add the rice powder according to you add the water for grinding rice. If you are adding little water, you have to add little amount of rice powder. If you are adding more water, then increase the amount of rice powder).
  • Grind in to a coarse and grainy texture.
  • Now crush the coconut with fennel seeds and shallots.
  • Mix the grinded rice and coconut together.
  • Mix it with all other ingredients in to it except oil. Make a dough.
  • Now, heat the oil in a deep frying pan.
  • Rub little oil or water in your hand.
  • Take little portion of dough and make a small disc shaped Ney pathal.
  • Transfer it in to the hot oil.
  • Fry until both sides are cooked.
