Lauki Kofta

Every vegetable will become our favorite when we are making something special with it. The spicy dumplings with the thick, creamy gravy is really delicious.



Lauki kofta

Ingredients:
 
For kofta:
  1. Lauki / bottle gourd (grated) _1cup
  2. Besan flour-2tbsp.
  3. Chilly powder-1tsp
  4. Salt- to taste
  5. Garam masala-1/4tsp
  6. Coriander leaves chopped -1tbsp
  7. Oil-for deep frying
Preparation:
  • Mix everything together except oil.
  • Make small lemon sized balls with it.
  • Deep fry in a low flame ( On high flame; the inner part of kofta will not be cooked).
  • Fry till brown in color; drain in to a paper towel.
(The grated lauki have lots of water in it. So don’t mix too much when adding besan flour and other ingredients.  If you want squeeze the grated lauki with your hands and remove the water; add it in to the gravy.)

For the gravy:

Ingredients:
  1. Grated coconut-1 ½ tsp.
  2. Cashew nut-7nos
  3. Onion-1
  4. Ginger, garlic, green chilly paste – 1tbsp
  5. Turmeric powder- ½  tsp.
  6. Chilly powder-1tsp
  7. Coriander powder-1tsp
  8. Garam masala- ½ tsp.
  9. Cumin powder- ½ tsp.
  10. Salt-to taste
  11. Yoghurt-2tbsp
  12. Coriander leaves-few
  13. Mustard-to splutter
  14. Cumin seeds-to splutter
  15. Red chilly-2nos
  16. Oil-2tbsp
Preparation:
  • In a pan, dry roast coconut and cashew nut.
  • Make a fine paste with it; keep aside.
  • Heat oil in a pan; splutter mustard seeds.
  • Add cumin seeds and red chilly.
  • Add onion and sauté well
  • Add ginger, garlic, green chilly paste.
  • Add all the powders; stir well.
  • Add 1cup of water; when it starts boiling add the coconut paste in to it.
  • Cover the lid and slow cook for 15 minutes.
  • Add beaten yoghurt, coriander leaves in to it.
  • After 5 minutes of boiling; add koftas in to it.
  • Serve hot with roti.
