It is the basic sponge cake recipe in addition of adding nuts.
- Maida-2cup
- Baking powder- 1tsp
- Egg-2 (room temperature)
- Milk-1cup (room temperature)
- Oil / Melted butter- ¼ cup (room temperature)
- Vanilla essence-3drops
- Crushed sugar-1 cup
- Nuts and raisins chopped -1tbsp
- Carrot grated-1tbsp
- dates grated-1tbsp
- Sift maida and baking powder together.
- Mix nuts, raisins, carrot and dates with a teaspoon of maida and sieve the excess maida.
- Beat the eggs well by adding sugar little by little with an electric beater till fluffy.
- Add melted butter, milk and vanilla essence one by one.
- Add maida little by little and mix well without forming any lumps.
- Add half of the nuts mixture in to it and mix well.
- Quickly heat the cooker (remove the whistle) and melt ghee or butter on sides.
- Sprinkle ½ teaspoon of maida at the bottom and sides of the cooker.
- Pour the cake batter in to the cooker and sprinkle remaining nuts on top of it.
- Put a heavy bottom pan on the stove top and put the cooker on top of it.
- Cook it in a low- medium flame for 30 minutes.
- Check with a knife inserted on the cake and it comes out clean.
- Remold the cake when cooker cools completely.
