Chatti Pathiri / Layered Pan Cake

Chatti  pathiri is a layered meat (or sweet) filling . it is a wonderful  heavy snack also. It includes three steps of making. Making the masala, dipping batter and making pan cakes. You can make the pan cakes by method of making dosa also (flour, water, egg,salt). But here I’m making the chappathi dough and make pan cakes from this; it tastes more than the other way.


For the filling:
  1. Chicken boneless-250 gm
  2. Onion-3small
  3. Ginger chopped-1tsp
  4. Garlic chopped-1tsp
  5. Green chilli chopped-1tsp
  6. Curry leaves chooped-1tbsp
  7. Coriander leaves chopped-1tbsp
  8. Turmeric powder- ½ tsp
  9. Chilly powder- ½ tsp
  10. Pepper powder- 1 tsp
  11. Coriander powder-1 tsp
  12. Garam masala- ½ tsp
For the pan cakes:
  1. Maida / all purpose flour- 2cup
  2. Ghee-1tsp
  3. Salt to taste
  4. Water- to make dough
For the dipping:
  1. Egg-3
  2. Milk-1tbsp
  3. Pepper powder-1/2 tsp
  4. Salt-to taste
Preparation:
  • Cook the chicken pieces with turmeric powder and sallt
  • Mince the cooked pieces and keep it aside
  • Heat a tablespoon of oil in a pan and sauté onion.
  • Add ginger,garlic and green chilli; sauté till row smell goes off.
  • Add all the powders one by one.
  • Add curry leaves and coriander leaves.
  • Add minced chicken in to it; mix well.
  • Now for the layers make a smooth dough with maida, ghee, salt and enough water; knead well.
  • Make 7 equal portions with the dough.
  • Make 7 thin chappathis of uniform size with it.
  • Heat tawa and cook the chappathis for just 1 minute on both sides. No need to cook more.
  • Keep it aside.
  • Now for the dipping mixture beat all the ingredients (egg, milk, pepper powder and salt) in a blender and pour it in to a wide plate.
  • Take a nonstick pan; add 2teaspoons of ghee.
  • Dip one chappathi in the egg mixture and put it in the pan.
  • Make the chicken masala in to 6 parts.
  • Take one part and spread it on top of the dipped chappathi in the pan.
  • In the same way dip other chappathis on the batter and spread the remaining masala on top of it.
  • Put the last chappathi on top of the pan and pour the remaining egg batter on top of it.
  • Cover the lid tightly and cook it in a low flame for 20-30 minutes.
  • When it’s done slowly turn the other side and cooker for another 5minutes.
  • Cut it in to the desired shapes.
