Chattipathiri is a layered pastry made in Malabar region especially for ifthar. You can make it sweet or savory version. Usually we made it with making dosa batter or pan cakes as a layer. But here vermicelli is used instead of that. If you want the other version of chattipathiri, do check chattipathiri.
Ingredients:
- Vermicelli thin-400g
- Egg-6
- Thick coconut milk (or milk-2cup)-of 2 coconuts
- Sugar-1cup
- Cardamom powder- ½ tsp
- Ghee-6tbsp
- Cashew nut-1cup
- Raisins-1cup
- Roast the vermicelli in 4tbsp of ghee and keep it aside.
- Add remaining ghee in the pan, roast cashew and raisin.
- Mix eggs, sugar, cardamom powder and coconut milk together.
- Pour it in to the roasted cashew and raisins.
- Stir constantly and bring to boil on a low flame.
- When it started foaming, switch off the flame.
- Divide the egg mix and vermicelli in to six parts.
- In a nonstick pan greased with ghee add a part of egg mix.
- Spread a part of vermicelli on top of it as a layer.
- Repeat the process for six layers.
- Cook covered on a low flame for 20 minutes or until done.
- Flip the other side carefully and cook for about 2 minutes.
- Or bake it in the oven for 15 minutes until it turns golden brown.
- note: the egg mixture should be in the watery consistency, (switch off the flame when they just started foaming) then only the vermicelli gets cooked properly. Otherwise the complete texture gets spoiled. the upper and lower layers should be the egg mixture.
