Stuffed Banana / Pazham Nirachathu

Stuffed banana is a delicious snack from Malabar cuisine. The rich stuffing with nuts and coconut makes it really yummy. You can add eggs, rice flakes along with the coconut also. choose bananas which do not ripe too much. The pictures’ are more helpful for the recipe than words.


Stuffed Banana / Pazham Nirachathu
Ingredients:
  1. Ripe Banana-2 nos.
For filling:
  1. Ghee-1tbsp
  2. Cashew nut- ¼ cup
  3. Raisins- ¼ cup
  4. Grated coconut-1cup
  5. Jaggery- 2 blocks (as per taste)
  6. Cardamom powder- ½ tsp
To cover the banana:
  1. Maida- ¼ cup
  2. Wheat flour- ¼ cup
  3. Salt-to taste
  4. Water-to makes the dough
Preparation:
  • Heat the ghee in a pan. Roast cashew and raisins.
  • Add grated coconut in to it.
  • Add grated jaggery or jaggery syrup.
  • Mix well till all the water dries out.
  • Sauté for about 2 minutes and add cardamom powder.
  • Keep it aside to cool completely.
  • Wash the bananas along with its skin, dry it with a cloth.
  • Now carefully starts to make 2 slits on the banana (so a total of 4 lines on the banana)(as shown in fig.) without reaching the ends (keep 1 ½ inch distance from the both edges).
  • Fill the coconut mixture inside the slits as much as possible (don’t break the edges)
  • Keep it aside and make the dough for covering bananas.
  • Divide the dough in to two parts and roll it as much as thin layer.
  • Now carefully peel the skin off banana and put it on top of the chapathi.
  • Cover it fully and seal the edges with little water on hand (cut out the excess portions of chapathi on both edges).
  • Now deep fry it in hot oil till both sides are golden in color (carefully put in to the oil, due to big size the oil may reach in to your hands) .
