Mango Chocolate Cake

 A lovely chocolate mango mousse cake to enjoy the mango season at it's best!!!!
Ingredients For the Chocolate Cake:
  1. Maida-200gm
  2. Egg-4nos
  3. Butter-250gm
  4. Powdered sugar-250gm
  5. Baking powder-50gms
  6. Baking soda- ¼ tsp
  7. Vanilla essence-1tsp
  8. Milk- ½ cup
  • All ingredients must be in the room temperature.
  • Sift maida, baking powder and baking soda together.
  • In a large bowl beat eggs and powdered sugar till fluffy.
  • Add butter and beat till creamy.
  • Add vanilla essence and milk.
  • Mix it with flour mixture with a spoon or blender on lower speed.
  • Bake it for 45 minutes in 180c (or cook through pressure cooker cake).
  • allow the cake to cools down completely before frosting

Other Ingredients for frosting:
  1. Sugar syrup- 1/4 cup
  2. Mango mousse- 2 cup
  • Cut the cake in to two equal pieces and add some pits in top of two pieces of cake by using a fork
  • add cooled sugar syrup above that evenly and rest for 10 minutes to absorb before applying mousse.
  • Apply mango mousse all over the cake  and in between the cake pieces evenly.
  • Refrigerate for 1 hour before adding mago jelly on top.
For mango jelly:
  1. mango puree- 1 cup
  2. gelatin- 1tbsp
  3. water-3 tbsp
  • Melt gelatin in 3 tbsp of water and double boil it until fully melts.
  • add this melted gelatin in the mango puree.
  • When it cools down completely; slowly pour it over the mousse evenly.
For Garnishing:
  1. mango pieces
  2. chocolate chips strawberry
  • Make a chocolate wall by melting chocolate chips as shown in the picture and decorate on top with some swirls of chocolate, mango pieces and strawberry.
  • Refrigerate the cake for another 3 hours before serving.
