Ripe Mango Curry

Usually we are making curry with raw mangoes. Mango pulissery (Kerala sadhya curry) uses ripe mango. Here is another simple and delicious ripe mango curry that goes well with steamed rice. Give a trial and enjoy the finger licking curry.
Ingredients:
  1. Ripe mango (choose mangoes which are not so ripe but about to ripe)- 1 cup chopped and peeled
  2. Coconut oil- 2 tbsp.
  3. Mustard seeds- ½ tsp
  4. Fenugreek- ¼ tsp
  5. Dry red chilly-2 nos
  6. Curry leaves-1 spring
  7. Asafoetida-/ hing- a pinch
  8. Turmeric powder- ½ tsp
  9. Chilly powder-1 tbsp.
  10. Salt-to taste
Preparation:
  • Heat coconut oil in a pan; splutter mustard seeds and fenugreek seeds.
  • Add curry leaves, dry red chilly, asafoetida, turmeric powder and chilly powder.
  • Add mango pieces in to it along with 1 cup of hot water and enough salt.
  • Cook for abuot 7-8 minutes or until the mango pieces gets cooked well and curry starts thickens.
  • Switch off the flame and serve hot with steamed rice.
