Chicken charga

Chicken charga is a spicy whole roasted chicken; but it’s not used any oven or grill for cooking. The whole marinated chicken is steam cooks for few minutes and then fries it in hot oil for another few minutes. It’s an ideal chicken recipe for all the spicy chicken lovers.
Ingredients:
  1. Chicken- 1 whole (small chicken); skin less
  2. Turmeric powder- ½ tsop
  3. Dry red chilly-3 no’s
  4. Pepper corns-1 tbsp
  5. Cardamom-3 nos
  6. Cinnamon-1 small inch stick
  7. Star anise-1
  8. Shahi jeera-1 tsp
  9. Mustard seeds- ½ tsp
  10. Curd-1 tbsp
  11. Lemon juice- 1 tbsp
  12. Salt-to taste
  13. Mint leaves-1  ½ tbsp
  14. Oil-1 tbsp
  15. Oil-for frying
Preparation:
  • Clean the chicken well; trim and cut the extra fats.
  • Pat it dry with a kitchen towel.
  • Make some slits with a knife in the chicken pieces to penetrate the flavors inside.
  • Add all the marinating ingredients in a blender (from 2 to 14) and make a thick paste out of it without adding water.
  • Apply it all over the chicken pieces and keep in fridge for at least 3 hours.
  • Now cook the marinated chicken in a steamer for 15 minutes.
  • Allow to cool completely and after that fry it in hot oil for another few minutes until both sides are cooked well. (Don’t fry too much; just until nice golden in color).
  • Take in to paper towel and serve hot with some salad; dips an roti....
Note:If you want to skip frying; try to cook it in the oven for about 30 minutes by applying some oil on all the sides. And also tie the legs with a thread to sit properly and remove it after cooking.
