Tender Coconut Pudding / Elaneer Pudding

Coconut pudding is one of the most delicious pudding. The tiny coconut chunks along with fresh coconut water makes it really yummy and rich.The pudding also serve as a desert after the lunch or dinner.


Ingredients:

  1. Tender coconut pulp-of 2 coconuts
  2. Tender coconut water-of 2 coconuts
  3. Pulp pieces-of one tender coconut
  4. Gelatin-2¼ tbsp (or use china grass)
  5. Water- ¼ cup
  6. Condensed milk-1 tin
Preparation:
  • Blend coconut pulp (of two coconuts) with coconut water in to smooth.
  • Add condensed milk in to and mix well.
  • Cut the remaining one pulp in to tiny chunks.Mix it with the above mixture.
  • Mix gelatin with 1/4 cup of water; let it rest for 10 minutes.
  • Double boil gelatin with ¼ cup of water until diluted well (clear water form).
  • Add the melted gelatin in to pudding mixture.
  • Mix well and pour in to pudding tray.
  • Chill for at least 4-5 hours to set.
  • Cut in to pieces and enjoy the great taste.!!!!
