Coconut pudding is one of the most delicious pudding. The tiny coconut chunks along with fresh coconut water makes it really yummy and rich.The pudding also serve as a desert after the lunch or dinner.
Ingredients:
- Tender coconut pulp-of 2 coconuts
- Tender coconut water-of 2 coconuts
- Pulp pieces-of one tender coconut
- Gelatin-2¼ tbsp (or use china grass)
- Water- ¼ cup
- Condensed milk-1 tin
- Blend coconut pulp (of two coconuts) with coconut water in to smooth.
- Add condensed milk in to and mix well.
- Cut the remaining one pulp in to tiny chunks.Mix it with the above mixture.
- Mix gelatin with 1/4 cup of water; let it rest for 10 minutes.
- Double boil gelatin with ¼ cup of water until diluted well (clear water form).
- Add the melted gelatin in to pudding mixture.
- Mix well and pour in to pudding tray.
- Chill for at least 4-5 hours to set.
- Cut in to pieces and enjoy the great taste.!!!!
