Kai pola is a famous sweet Malabar dish rich with eggs and bananas. It looks like a cake but no baking is involved. It takes only few minutes to make and it tastes so delicious.
- Banana-2 (Kerala)
- Eggs-4
- Cardamom powder-1/4 tsp
- Sugar-2 tbsp
- Milk-1 tbsp
- All purpose flour-1 tbsp
- Baking powder-1/4 tsp
- Ghee-2 tbsp
Preparation:
- Cut the bananas in to small square pieces.
- In a pan heat tbsp of ghee, roast the banana pieces till golden brown in color.
- Keep aside and let it cool.
- In blender add eggs, sugar, cardamom powder, all purpose flour and baking powder.
- Blend well, at this time heat tsp of ghee in a cooker.
- Add the banana pieces in it and also the egg mixture.
- Mix it with a spoon.
- On the stove top put a heavy bottom pan and put the pressure cooker on top of it by removing the vessel.
- Cook it on a medium low flame about 20 minutes.
- (u can cook it in a non-stick deep covered pan at very slow flame).
- Insert a tooth pick or fork in the center and make sure it comes out clean.
