Vettu cake is a sweet fried tea time snack which can be found in the glass cabinets of most tea shops in Kerala. It is very easy to make and just taste like a cake.

- All purpose flour-1cup
- Semolina (rava) – 2tbsp.
- Sugar –2tbsp.
- Egg-1
- Cardamom powder-1/4tsp
- Baking powder-1/4tsp
- Oil-for deep fry
- Mix all purpose flour, semolina, baking powder and cardamom powder in a bowl.
- Beat egg and sugar in a blender.
- Add egg mixture in to the flour and make dough.
- Cover it with a wet towel and rest for 30 minutes.
- After 30minutes; roll the dough in to half inch thickness.
- Sprinkle only enough flour to make a roll.
- Cut it in to square pieces and make an ‘x’ shape cut on each square with a knife.
- The size of the vettu cake will double when we fry it; so make sure to cut in the correct thickness and length.
- Deep fry it in a low flame till each sides become golden brown in color.
