Kabsa / Majboose or Arabic Biriyani Recipe

Kabsa  is a famous Arabic dish similar to that of Indian biryani; cooked with rice and meat.  But it is less spicy and easy to make. The specialty of kabsa is the flavor of dry lemon, cinnamon, cardamom and cloves. It is made differently in each house hold. It is served with homemade tomato sauce. It also made with lamp, beef and fish.
Ingredients:
  1. Basmati rice long-2cup
  2. Chicken-1 kg
  3. Onion-  2nos.
  4. Tomato-2nos
  5. Tomato puree-1cup
  6. Garlic crushed- 1tbsp.
  7. Green chilly- 2nos.
  8. Carrot grated-2tbsp
  9. garam masala-1/2tsp
  10. Cinnamon stick-2piece 1 inch size
  11. Cloves-4nos.
  12. Cumin seeds-1tsp.
  13. Cardamom-4nos.
  14. Dry lemon-1no.
  15. Pepper powder-to taste
  16. Salt-to taste
  17. Oil-1/4cup
  18. olive oil-1tbsp
  19. Water- 4 1/2 cup
  20. Cashew nuts-to garnish
  21. Raisins- to garnish
  22. Peeled almonds- to garnish
 Preparation:

For the tomato puree:
Add two tomatoes in the boiling water for 5 minutes. Now take it out from boiling water and put it in the cold water, remove the skin of both tomatoes and put in the blender and blend well without adding water. Tomato puree is ready.

For the kabsa:
  • Soak the basmati rice in water. Keep it aside.
  • Heat oil in a pan; sauté onion till golden brown in color.
  • Add garlic and green chilly, sauté a while.
  • Add cinnamon, cardamom, cumin seeds and cloves .
  • Add tomato, sauté well till tomatoes are mashed well.
  • Add tomato puree, pepper powder, garam masala, carrot and dry lemon.
  • Add the chicken pieces in to it.
  • Add 4cups of boiling water and salt; close the lid and cook for 20 minutes in low-medium flame.
  • Do not cook it openly, because the water may get absorbed.
  • Now take out the chicken pieces from the water.
  • Add the drained basmati rice in to water, close the lid
  • Cook in low flame till the rice cooked well and all the water get absorbed.
  • Add a table spoon of butter or olive oil in another pan; roast the cashew nuts and raisins.
  • In the same pan put the chicken pieces from water and roast both sides till golden brown in color.
  • Add the chicken pieces in to the cooked rice.
  • Garnish it with cashew nuts, raisins and almonds.
