Appam / Palappam Recipe


Appam is a famous kerala break fast recipe. There are types of appam, according to the variation of some ingredients. Here is the recipe of soft, yummy and spongy appam.
Ingredients:
  1. Raw rice-3cups
  2. Cooked rice-1/2 cup
  3. Grated coconut- 1 ½ cup
  4. baking soda- ½ tsp
  5. Sugar-3tbsp
  6. Salt-to taste
  7. Water-2cups
Preparation:
  • Wash and soak the rice in water for overnight (5-6 hours).
  • Grind it along with cooked rice, coconut, water and sugar.
  • Let it rest for overnight in a warm place (6-7 hours).
  • Add salt and baking soda in to it; let it rest for another 15 minutes.
  • Grease the wok with oil and turn the heat to medium-lower (if using non-stick pan; no need to grease it).
  • Pour a ladle of batter and swirl it around the pan nicely.
  • Cover and cook the appam until the edges become golden brown.
  • Note: you can also use yeast or coconut water  for raising the appam instead of baking soda.
