Beetroot Pacahdi

 

Beet root pachadi is a traditional south Indian recipe especially during Kerala Sadhya. All Pachadi’s are prepared with fresh vegetables, coconut paste, green chilly and curd. And then season it with mustard and curry leaves. It is normally makes in small quantities; one beetroot is enough to make a colorful, tasty pachadi.

Ingredients:
  1. Beet root-1medium
  2. Curd-1cup
  3. Coconut grated- ¼ cup
  4. Green chilly-1
  5. Mustard- ½ tsp
  6. Salt-to taste
  7. For seasoning:
  8. Oil-1tbsp
  9. Curry leaves-1string
  10. Red chilly-1
Preparation:
  • Grate the beetroot in to very thin using a grater.
  • Cook it with ¼ cup of water and salt until become soft and all the water dries off.
  • Grind the coconut along with mustard and green chilly in to a fine thick paste.
  • Add it in to the beet root and cook for a minute.
  • Switch off the flame and add curd in to it.
  • Suddenly, season it with oil, mustard, curry leaves and red chilly.
