Even though bitter gourd has a bitter taste; no one will avoid this vegetable due to its good source of vitamins and minerals. It is a very useful vegetable for diabetic person and many other blood disorders. Bitter gourd curry is a simple recipe that goes very well with rice and chapattis.

- Bitter gourd-2large
- Oil- 1tbsp
- Mustard seeds-1tsp
- Shallots chopped-1cup
- Green chilly-2
- Garlic chopped-2tsp
- Curry leaves-1string
- Dry red chilly-1
- Tamarind-lemon sized ball
- Salt-to taste
- For the coconut paste:
- Grated coconut- 3tbsp
- Turmeric powder-1/2 tsp
- Coriander powder-1tsp
- Soak the tamarind in hot water.
- Dry roast the coconut for few minutes, until golden in colour.
- Add turmeric powder and coriander powder; switch off the flame.
- After cools down; make it into a fine paste with little water.
- Het oil in a pan; splutter mustard seeds.
- Add shallots, garlic, green chilly, curry leaves and red chilly.
- Sauté until shallots are brown in colour.
- Add chopped bitter gourd pieces in to it; sauté for 5 minutes.
- Add coconut paste, hot water and salt in to it.
- Boil for 5 minutes.
- Add tamarind pulp in to it and cook for another 7 minutes.
