Bitter gourd curry

Even though bitter gourd has a bitter taste; no one will avoid this vegetable due to its good source of vitamins and minerals. It is a very useful vegetable for diabetic person and many other blood disorders. Bitter gourd curry is  a simple recipe that goes very well with rice and chapattis.
Ingredients:
  1. Bitter gourd-2large
  2. Oil- 1tbsp
  3. Mustard seeds-1tsp
  4. Shallots chopped-1cup
  5. Green chilly-2
  6. Garlic chopped-2tsp
  7. Curry leaves-1string
  8. Dry red chilly-1
  9. Tamarind-lemon sized ball
  10. Salt-to taste
  11. For the coconut paste:
  12. Grated coconut- 3tbsp
  13. Turmeric powder-1/2 tsp
  14. Coriander powder-1tsp
Preparation:
  • Soak the tamarind in hot water.
  • Dry roast the coconut for few minutes, until golden in colour.
  • Add turmeric powder and coriander powder; switch off the flame.
  • After cools down; make it into a fine paste with little water.
  • Het oil in a pan; splutter mustard seeds.
  • Add shallots, garlic, green chilly, curry leaves and red chilly.
  • Sauté until shallots are brown in colour.
  • Add chopped bitter gourd pieces in to it; sauté for 5 minutes.
  • Add coconut paste, hot water and salt in to it.
  • Boil for 5 minutes.
  • Add tamarind pulp in to it and cook for another 7 minutes.
