Egg Roast Recipe

Egg roast is one of the most popular side dish of Kerala cuisine. It's an all time favorite recipe that is quite simple and easy to make. It's a best combination for all type of roti's.


Ingredients:
  1. Boiled Eggs-2
  2. Onion-2
  3. Tomato-1big
  4. Ginger Garlic Paste-1tbsp
  5. Curry leaves-1spring
  6. Turmeric powder- 1/2 tsp
  7. Kashmiri chilly powder-1tsp
  8. Garam masala-a pinch
  9. Oil-1tbsp
  10. Salt-to taste
Preparation:
  • Heat  a large pan with oil, Saute onion till transparent.
  • Add curry leaves and ginger, garlic paste; Saute until raw smell goes off.
  • Add turmeric powder, sauté for a minute.
  • Add chilly powder,salt and garam masala, mix well.
  • Add tomato pieces in to it and sauté until all the pieces get mashed well (about 5-6 minutes). 
  • Make small slits on the eggs with a knife and add it in to the gravy.
  • Add 1/4 cup (or less) of hot water in to it and cook for about another 2 minutes or until the gravy thickens.
  • Serve hot with the choice of your Roti.
