Egg roast is one of the most popular side dish of Kerala cuisine. It's an all time favorite recipe that is quite simple and easy to make. It's a best combination for all type of roti's.

- Boiled Eggs-2
- Onion-2
- Tomato-1big
- Ginger Garlic Paste-1tbsp
- Curry leaves-1spring
- Turmeric powder- 1/2 tsp
- Kashmiri chilly powder-1tsp
- Garam masala-a pinch
- Oil-1tbsp
- Salt-to taste
- Heat a large pan with oil, Saute onion till transparent.
- Add curry leaves and ginger, garlic paste; Saute until raw smell goes off.
- Add turmeric powder, sauté for a minute.
- Add chilly powder,salt and garam masala, mix well.
- Add tomato pieces in to it and sauté until all the pieces get mashed well (about 5-6 minutes).
- Make small slits on the eggs with a knife and add it in to the gravy.
- Add 1/4 cup (or less) of hot water in to it and cook for about another 2 minutes or until the gravy thickens.
- Serve hot with the choice of your Roti.
