As a pickle lover myself; It is one of my favorite pickle recipe as it does not contain too much spices. Every pickle tastes more after resting more time. This yellow lemon pickle is quite easy to make and no need of months to get softened. This particular way of pickling must be the simplest way of pickling lemons.
Ingredients:
- Lemon-250gm
- Green chilly-8(as per taste)
- Gingelly oil- ¼ cup
- Fenugreek seeds- ¾tsp
- Mustard seeds-1tsp
- Curry leaves-3string
- Ginger chopped-2tsp
- Garlic chopped-2tsp
- Turmeric powder- ½tsp
- Asafetida-a pinch
- Salt-to taste
- Vinegar- ¼ cup
Preparation:
- Wash the lemons and green chilly; wipe it with a kitchen towel.
- In a steamer; steam cooks the lemons and green chillies (do not cut it in to pieces, but as a whole) for 10-15 minutes.
- After cools doen gently cut the lemon into 4 pieces (if lemon is small in size; make 2 pieces) and green chilly in to slits.
- Keep it aside.
- Dry roast the fenugreek, mustard and curry leaves for a minute and give a crush on blender.
- Heat the gingelly oil in a pan; add the crushed mix, lemon and green chillies.
- Add enough more salt in to it.
- Add the vinegar in to it and boil for a minute.
- After cools down completely; pour it in to an airtight container; sprinkle some salt on top of it.
- Open and eat it only after a weak!!!
