Squid roast is an authentic Kerala cuisine among sea food recipes. Squid and prawns are the common favorite seafood. It has many health benefits. One of the most important is to keep the skin watery as just as squids body itself. Here is the recipe of spicy squid/koonthal roast.

- Squid- ½ kg
- Onion-2
- Tomato-1big
- Ginger garlic crushed -1tbsp
- Green chilly-2
- Oil-2tbsp
- Curry leaves-2string
- Turmeric powder- ½ tsp
- Kashmiri chilly powder-2tsp
- Pepper powder- ½ tsp
- Coriander powder-1tsp
- Garam masala-½ tsp
- Clean the squid and cut it in to rings.
- Pressure cooks it for 2 whistles along with turmeric powder, salt, 1/2tbsp of ginger garlic paste and pepper powder (no need to add water, the squid contains lots of water in it).
- In another pan; add oil and sauté onion until golden in color.
- Add remaining ginger garlic, green chilly and curry leaves.
- Sauté until the raw smell goes off.
- Add all the powders in a low flame and mix well until dark in color.
- Add chopped tomato in to it and saute until all the tomatoes are mashed well.
- Add cooked squid in to it and sauté until the gravy thickens.
- Serve hot with roti or rice.
