Spinach is a wonderful leafy vegetable having excellent source of vitamins and fiber. Eating such nutrient-dense food will improve your health, digestion and immunity. It is recognized as one of the functional foods for its nutritional antioxidants and anti-cancer properties. So start eating it once in a week!!! Some of them not interested to eat it due to its raw tastes, but we compromise it with adding coconuts and some other favorite ingredients. Egg-spinach stir fry is such an awesome twist.

- Spinach-1 bunch
- Egg-1
- Coconut-1tbsp
- Green chilly-1
- Cumin seeds- ¼ tsp
- Oil-2tsp
- salt-to taste
- Curry leaves-1string
Preparation
- Clean and chop the spinach in to extra fine pieces.
- Crush the coconut with green chilly and cumin seeds.
- Heat oil in pan and splutter mustard seeds.
- Add turmeric powder in to it.
- Add spinach, curry leaves and grinded coconut.
- Combine well and cook for a minute.
- Push this in one side of the pan and in the other side break the egg.
- Sprinkle it with pinch of salt and scramble for a minute.
- Now combine it with spinach and cook for another 2 minutes.
- Add just enough salt for the spinach and switch off the flame.
- Serve hot with rice.
