Banana Rolls

 Banana rolls are an easy and quick snack idea. Especially kids love to eat this; even they are not banana lovers. Kerala large banana is used for making rolls and simply roll it with grated coconut mix.
Ingredients:
  1. Banana-2 large
  2. Grated coconut- 1/4 cup
  3. Sugar- 2 tbsp (or jaggery)
  4. Cardamom powder- 1/4 tsp
  5. Cashew and raisins-few
  6. Cherry-to garnish
  7. Butter / ghee -2 tbsp
Preparation:
  • Peel the skin of banana and cut them in to lengthwise thin pieces. (as thin as possible; it is easy to roll the thin layers).
  • Heat a non-stick pan with butter, fry cashew pieces and raisins until golden.
  • Take it out and keep aside.
  • In the remaining butter Saute the banana pieces until both sides are nice golden in color (when flip in to the other sides add little butter also).
  • Take it out from the pan carefully without breaking.
  • In the same pan, add coconut grated, sugar, cashew, raisins and cardamom powder. Mix well for two minutes and switch off the flame. Allow to cool.
  • Now take  a piece of banana and spread little coconut filling evenly on top.
  • Carefully roll it and when it reaches the edge pin it with small skewers. Thread it with a piece of cherry on the edge as shown in the picture.
  • Serve with a cup of tea and enjoy!!!
