Banana rolls are an easy and quick snack idea. Especially kids love to eat this; even they are not banana lovers. Kerala large banana is used for making rolls and simply roll it with grated coconut mix.

- Banana-2 large
- Grated coconut- 1/4 cup
- Sugar- 2 tbsp (or jaggery)
- Cardamom powder- 1/4 tsp
- Cashew and raisins-few
- Cherry-to garnish
- Butter / ghee -2 tbsp
- Peel the skin of banana and cut them in to lengthwise thin pieces. (as thin as possible; it is easy to roll the thin layers).
- Heat a non-stick pan with butter, fry cashew pieces and raisins until golden.
- Take it out and keep aside.
- In the remaining butter Saute the banana pieces until both sides are nice golden in color (when flip in to the other sides add little butter also).
- Take it out from the pan carefully without breaking.
- In the same pan, add coconut grated, sugar, cashew, raisins and cardamom powder. Mix well for two minutes and switch off the flame. Allow to cool.
- Now take a piece of banana and spread little coconut filling evenly on top.
- Carefully roll it and when it reaches the edge pin it with small skewers. Thread it with a piece of cherry on the edge as shown in the picture.
- Serve with a cup of tea and enjoy!!!
