Chicken Spring Roll

 Spring roll is a popular rolled appetizers filled with the choice of our favorite fillings. Chinese spring roll sheets are easily available at market. But we can make homemade instant spring roll sheets by using the flour batter by making pancakes.
Ingredients:
  1. Flour / maida-1 cup
  2. Egg-
  3. Salt-to taste
  4. Water
Preparation of pancake:
  • Mix flour, egg and salt.
  • Add water little by little to the dosa batter consistency (not thin or not too thick).
  • Heat a non-stick an; pour a ladle of batter and move it in the circular motion to make a large pancake.
  • Make all the pancakes in this way (about 6 pancakes).
Ingredients For The Filling:
  1. Chicken boneless-200g
  2. Onion-1
  3. Ginger, garlic, green chilly chopped-1tbsp
  4. Turmeric powder- 1/2tsp.
  5. Pepper powder-1tsp
  6. Coriander powder-1/2 tsp.
  7. Salt-to taste
  8. Garam masala-1/4tsp
  9. Coriander leaves-few
  10. Boiled Potato-1 (optional)
Preparation:
  • Cook the chicken in a pressure cooker with salt, turmeric and water for 3 vessels.
  • Mince the chicken in to small pieces.
  • In a pan heat a teaspoon of oil; sauté onion.
  • Add ginger, garlic, green chilly chopped; sauté till the raw smell goes off.
  • Add all the powders for masala.
  • Add minced chicken, mashed potato and coriander leaves in to it.
Other Ingredients:
  1. Beaten Egg-2 nos
  2. Salt-little
  3. pepper powder-little
  4. Bread Crumbs-1 cup
  5. Oil-for frying
Preparation Of Spring Roll:
  • Take a  pancake; add little filling as a small line at the centre by leaving some distance from both edges (as in the picture).
  • Now fold it with the both edges and start rolling from one end to other as a roll.
  • Place it on a tray and makes all the spring rolls in this way.
  • Beat two eggs with little salt and pepper powder; pour it on a wide plate.
  • Also take bread crumbs in a wide plate to coat.
  • Take a roll and dip it in the egg batter using one hand and in the bread breads by another hand.
  • Do it for all the rolls and fry in the hot oil until nice golden in color.
  • Drain in to paper towels to remove the excess oil in it.
  • Serve these warm spring rolls along tomato ketchup.
