Ingredients:
- Milk-4 cup
- Basmati rice- 1/4 cup
- Sweetened Condensed milk- 1/2 tin
- Pistachio- 1/4 cup + for garnishing
- Saffron Strands-6 nos
- Cardamom powder- 1/4 tsp
- Ghee-1 tbsp
- Crush saffron strands with your hands and soak in two tablespoons of hot milk.
- Blend the chopped pistachios in a blender to a powder form.
- Wash and soak the basmati rice in water for 30 minutes; Drain it.
- Heat ghee in a large pan, add drained basmati rice and saute for a minute in low flame without changing it's color.
- Add milk in to it and boil.
- Stir well continuously until the rice gets cooked well and in a mashed consistency; also the milk just starts thickening (about25-30 minutes).
- Add condensed milk, powdered pistachio, saffron soaked milk and cardamom powder.
- Mix well for a minute and switch off the flame.
- You can serve it as warm or chilled by topping it with lots of sliced pistachios.
