Bird's Nest / Kilikoodu Recipe

Bird's nest is a crispy cutlet that wrapped with thin vermicelli instead of bread crumbs.  We can make it using vegetable, fish or meat filling. You can prepare the patty in advance and store it in the freezer for easy use. Here is the simple recipe preparation of delicious chicken nests.
 Ingredients for Chicken Masala:
  1. Chicken boneless-200 g
  2. Onion-1
  3. Ginger, garlic, green chilly chopped-1 tbsp
  4. Turmeric powder- 1/2 tsp.
  5. Pepper powder-1 tsp
  6. Coriander powder-1/2 tsp.
  7. Salt-to taste
  8. Garam masala-1/4 tsp
  9. Boiled Potato-1 large
  10. Coriander leaves-few
Other Ingredients:
  1. Eggs-2 large
  2. Thin vermicelli- 1 cup
Preparation:
  • Cook the chicken in a pressure cooker with salt, turmeric and water for 3 vessels.
  • Mince the chicken in to small pieces.
  • In a pan heat a teaspoon of oil; sauté onion.
  • Add ginger, garlic, green chilly chopped; sauté till the raw smell goes off.
  • Add all the powders for masala.
  • Add minced chicken and coriander leaves in to it.
  • Cook whole potato with little salt and turmeric powder in a pressure cooker until cooked soft.
  • After cools down peel the skin and mash the potato well without any lumps.
  • Mix it with prepared chicken masala.
  • Now divide the chicken in to medium bowls.
  • Grease your hands with oil or water.
  • Take a ball and make a half inch thick patty out of it.
  • Beat the eggs with little salt and pepper powder in  a wide plate.
  • Dip the prepared chicken patty in it and then dip it in the broken vermicelli and coat well.
  • Prepare all cutlets in this way.
  • Heat oil in a pan; shallow fry the cutlets on both sides in low flame until browned.
  • Take in to paper towels and serve hot with a cup of tea.
