Fresh Mango Cake

A simple mango flavored cake pastry to enjoy the mango season.
Ingredients For The Cake:
  1. All purpose flour-1 cup
  2. Baking powder- 1/2 tsp
  3. Sugar powdered- 3/4 cup
  4. Egg-4 nos
  5. Oil-4 tbsp
  6. Vanilla essence- 1/2 tsp
Preparation:
  • Sift flour and baking powder together.
  • Beat egg yolks  and sugar at high speed for five minutes until creamy with an electric beater.
  • Add vanilla essence, oil and flour mixture in to it; beat again at low speed until completely mixed.
  • Beat egg whites separately at high speed until fluffy peaks comes.
  • Carefully fold it with the egg yolk mix and immediately pour in to the greased baking pan.
  • Bake it in the pre-heated oven for about 30-35 minutes or until a skewer is inserted in the centre and check whether it comes out clean.
For the Icing:
  1. Whipping powder- 2 sachet
  2. Milk- 250 ml
  3. Vanilla essence- 1/2 tsp
  4. Sugar syrup- 1/4 cup
  5. Mango pulp- 3 tbsp
  6. Thin sliced mango pieces- 2 cup
Preparation:
  • After completely cools down the cake. Cut it into two equal rounds.
  • Mix sugar syrup with mango pulp; make some knots on the top of each piece of cake with a fork.
  • Apply the syrup evenly over two pieces of cake and let it rest for 15 minutes (to absorb all the syrup).
  • Beat whipping powder with milk and vanilla essence at high speed in a chilled bowl until fluffy.
  • Refrigerate it for 20 minutes before applying on top of the cake.
  • Apply evenly over all the sides and in between the cake.
  • Mix the fresh mango slices with little sugar syrup to glaze and remain fresh.
  • Decorate the mango pieces on top of the cake carefully.
  • Refrigerate the cake for 4 hours to set.
  • Cut in to pieces and enjoy!!!!
