Chicken Croquettes


Croquettes are the yummy bread crumbed roll eat as a snack or appetizer. We can make it with meat, potato, fish or even with any veggies. Here is an easy and delicious chicken croquettes recipe.
Ingredients:
  1. Chicken Boneless- 200 gm 
  2. Boiled Potato-1 small
  3. Butter-2 tbsp
  4. Thinly minced garlic-1 tbsp
  5. All Purpose Four-1  1/2 tbsp
  6. Milk- 1/2 cup
  7. Pepper powder-1 tsp
  8. Salt-to taste
  9. Chopped Parsley / coriander leaves- 1 handful
  10. Parmesan cheese grated-2 tbsp (optional)
  11. Egg beaten-2 nos (with little salt n pepper powder)
  12. Bread Crumbs-1 1/2 cup
Preparation:
  • Cook chicken pieces in pressure cooker with little salt and pepper powder for 3 high whistles.
  • After releases the pressure by itself open the lid and dries out all the water content in it by open heating.
  • After cools down blend the chicken pieces in a blender to a coarse paste.
  • Heat butter in a pan; add minced garlic and saute for a minute.
  • Add flour in to it and saute in low flame for few seconds.
  • Add milk slowly in to it by stirring well and without forming any lumps.
  • Stir well until the milk gets thickens well. (must be thick well).
  • Add little salt and 1 teaspoon of pepper powder in it; mix well.
  • Add chopped parsley, Parmesan cheese, mashed boiled potato and blended chicken.
  • Mix well for two minutes and switch off the flame.
  • After cools down make small croquettes out of it.
  • Take beaten eggs and bread crumbs in two separate wide bowls.
  • Now coat the prepared croquettes in beaten egg with one hand and bread crumbs by other hand.
  • Deep fry it in the hot oil on medium-low  flame until nice golden.
  • Drain in to paper towels and serve hot with your favorite dip!!!!
